Like many other organizations and businesses, the IFSC had to make abrupt cancellations in 2020 due to COVID-19. I remember working behind the scenes a bit for the planning of the event – which makes this year’s conversations even more exciting. We are slowly recreating the food system.

Our event sponsors, LRS, Midwest Compost LLC and Mindful Waste, were all revved up to bring folks together around food (a great connection when composting is your organization’s mission). There was even a clever appetizer menu planned to reduce wasted food: Scrappy Apps. Thankfully, our sponsors are still with us in this planning; we are very grateful for their support.

This year, the local food system initiatives at Duke’s Alehouse & Kitchen will create a prime setting for our IFSC reunion and reward us after a few challenging years. Chef Zak Dolezal, owner, is both a Silver Sustaining and Gold Level We Compost Recognized Partner of the IFSC. This will be an evening of complimentary light appetizers, refreshments, craft beer & wine in Crystal Lake.

Duke’s believes that food should not only be responsibly sourced, but also healthy for communities, the environment, and human health. Attendees of the event will taste sustainable ingredients from local farmers and producers and feel confident that we’re closing the loop with food scrap diversion operations which are ingrained in Duke’s operations.
